2015 Os Cantals
Handpicked grapes from a single dry farmed vineyard - Bolloncillos, Alto del Collado - at 600-650 meters elevation with vines an average age of 50 years old. The soils are slate and limestone. The name (in Fabla Aragonesa, a traditional almost extinct language from the region) refers to the plentitude of rocks (slate) in the vineyard.
Fermentation with indigenous yeasts, 50% stem inclusion with two manual punchdowns per day in tiny open fermentors (800 Kg). Racking, malolactic and aging in Francois Freres puncheon (456L).

“This is a wine designed for the long haul, selected from their two best vineyards in the village of Ainzón, with quite an imprint from the élevage right now, and will need more time in bottle. But at this point in time you need to guide yourself by the palate, where the tannins are very fine and there is good balance and freshness. This is a wine from Borja, where power is a given and the challenge is to find finesse and balance.”
