2021 Five Fourths 5/4 Clarete
2 parts Cencibel (Tempranillo), 1 part Garnacha, 1 part Airen, 1 part Malvar
Cencibel, the local clone of Tempranillo, is uniquely suited to the harsh climate of the area with a smaller, more compact bunch size and thicker skin to withstand heavy winds. A selection of old bush vines (average of 50 years old) on limestone & clay soils at 750-800 meters on the meseta.
The four varieties were all hand harvested and cofermented with spontaneous whole cluster fermentation and elevage in amphora.

Each variety lends its own characteristic to this fresh wine - soft tannin, cherry and liquorice from the Tempranillo; white pepper, sandelwood and cassis from the Garnacha; butterscotch, chamomile and thyme from the Malvar; and citrus, bergamot orange, and freshness from the Airen.

"The young and unoaked 2021 Ercavio 5/4 was produced with the four local varieties from the zone, a co-fermentation of 40% Cencibel and 20% each Garnacha Tintorera, Airén and Malvar in used barrels with indigenous yeasts. So, it contains some 40% white grapes, but the wine is as dark (or darker!) as the rest of the reds, with a bright purple color and a spicy and somewhat exotic nose (curry?). It has a medium body and medium ripeness, good freshness (a pH of 3.4) and fine-grained, chalky tannins that make it quite serious. Only 900 bottles were filled in February without any added sulfites. The wine is clean, fresh and fruit-driven."
