VINEYARDS | From a single plot - “Le Grand Morceau” - of 55 year old vines on clay/limestone soil with small flints. This inaugural bottling is from the 2015 vintage exclusively.
WINEMAKING | Traditional wild yeast fermentation in oak barrels (over 10 years old) followed by lees aging with bâtonnage for six months - no malolactic. Secondary fermentation and further aging on the lees for 3 years. No dosage - brut nature.

"Barrel fermented and disgorged without dosage in January 2019, the NV Brut Nature Instinct Meunier is showing well, mingling aromas of yellow orchard fruit, red apple, brioche and chamomile with hints of fresh pastry, toasted almonds and struck flint. Medium to full-bodied, vinous but incisive, it's a chalky, racy wine with plenty of structuring dry extract and a tangy spine of acidity."

"The NV (2018) Brut Nature Meunier Instinct is a single-parcel Pinot Meunier from 59-year-old vines in the loam and flint soils in Talus Saint Prix, vinified in used barrels without malolactic fermentation. Subtle smoldering candle, ripe plum, dark peony and tulip notions are all wrapped up in a gentle, oaky creaminess. The palate sweeps up these notions and adds a real dollop of ripe lemon juiciness to the fruit on the palate where creamy, still slightly frothy foam swishes. The oak is far less present on the palate. This is about Meunier purity and expression - if only this had longer on the lees. Intriguing and expressive. Zero dosage. Disgorged: September, 2021."

An intriguing mash up of sweet, savory and even spicy notes. Light and bright with high-acid bing cherry, raspberry strawberry, and pomegranate fruit flavors with pronounced minerality and an earthy /mushroom component.
